2022 Batch 6 Sparkling Cider

Barrel-aged : Late-foraged apples : 750 ml : 6.6% alc./vol.

This sparkling cider was made with wild apples foraged late in the season.  We then barrel aged it for 9 months and bottled it with a touch of honey to make it sparkling. 

The combination of wild fermentation and barrel aging has given this one a real funkiness that is nicely balanced with tannins and a hint of residual sweetness.
